About Sabudana

Sago (Sabudana), a form of tapioca, is also known as cassava root. Sabudana refers to the starch that is extracted from tapioca roots, which is then processed to form spherical pearls. Sabudana (Sago) is a staple food in many countries and used as a fasting food in India. In other countries, it is used as a thickening agent in various manufactured foods.
Tapioca sago has many unique properties that contribute to texture and mouth feel. Many of these physical properties are a result of its starch composition and are significantly affected by processing. Sabudana when soaked in water, becomes characteristically soft and chewy, with a prominent elastic texture and translucent appearance.

There are four variants of sabudana available which have different size, manufacturing process and uses. The available variety is mentioned as under:-

  • Common Sabudana (Tapioca sago common)
  • Kheerdana Sabudana (Instant Sabudana)
  • Glass Nylon Sabudana (used for frying)
  • Cylon Nylon Sabudana (frying/making kheer)

Sabudana is one of the most commonly used ingredients during fasts. However, I like to use it not only during fasts but also on the regular days because of the health benefits it has. However, sabudana can be a bit tricky ingredient to use. And therefore I love to use the great quality sabudana by Royal Ratan. I have been using it for quite some time now. It puffs up beautifully and anything that is prepared with it turns out to be perfect. The dishes are perfectly cooked; there is no sort of stickiness or anything. I look forward to use Royal Ratan Sabudana for trying more and more recipes.
